Milena Corredig

Milena Corredig is a Professor of Food Science at Aarhus University, Denmark, and visiting professor at Lund University in Sweden. Her research focuses on colloids and interfaces, specifically for food science and technology. She studies the relationship between structure and functionality of ingredients and their changes during processing.

She has published more than 400 refereed publications, and she is the editor of Critical reviews in food science and nutrition, food hydrocolloids and sustainable food proteins.
